Ingredients
1. For the Noodles:
- 100g rice noodles (kuey teow)
- Water (for soaking and boiling)
2. For the Broth:
- 500ml beef broth
- 100g beef, thinly sliced
- 1 lemongrass stalk, bruised
- 1 star anise
- 1 cinnamon stick
- 2 cloves garlic, minced
- 1 shallot, sliced
- 1 tablespoon cooking oil
- Salt, to taste
- Pepper, to taste
3. For Garnishing:
- Sliced green onions
- Fresh coriander leaves
- Fried shallots
- Lime wedges
- Sambal (optional, for added spice)
Instructions
1. Prepare the Ingredients:
- Soak 100g of rice noodles (kuey teow) in warm water for 10-15 minutes or until softened. Drain and set aside.
- Gather 500ml of beef broth, 100g of thinly sliced beef, 1 lemongrass stalk (bruised), and spices like star anise and a cinnamon stick.
2. Cook the Broth:
- In a pot, heat 1 tablespoon of oil and sauté 2 cloves of minced garlic and 1 sliced shallot until fragrant.
- Add the beef broth, bruised lemongrass, star anise, and cinnamon stick. Bring to a gentle boil.
- Add the beef slices and simmer on low heat for 15-20 minutes until the beef is tender. Season with salt and pepper to taste.
3. Prepare the Noodles:
- In a separate pot, bring water to a boil. Add the soaked kuey teow noodles and cook for 1-2 minutes until soft.
- Drain the noodles and divide them into serving bowls.
4. Assemble the Dish:
- Ladle the hot beef broth and beef slices over the noodles in each bowl.
- Garnish with sliced green onions, fresh coriander, fried shallots, and a squeeze of lime for added flavor.
5. Serve:
- Serve hot with a side of sambal for those who prefer an extra kick of spice.
